What is Lugaw?
"Lugaw" is a Filipino term for congee. Traditionally, it was served for sick people who do not have the craving to eat. It is a soft-boiled rice cooked in meat broth with ginger and pepper. The logic why it was coined as food for the sick were 1) sick people lose their appetite and 2) sick people do not have enough energy to chew their food. Lugaw makes a little change. Sick people don't need to chew, just swallow. Sick people don't need to have their appetite to eat lugaw, just swallow. What was important was the sick person gets the energy he needs for the day. Hence, a portion of his energy is retrieved by the lugaw just like any other food can do. At one point, the food was converted into usable nutrients.
As years went by, lugaw became a traditional food - a breakfast or a snack. However, we are not concern here with the sick people. The title "Lugaw para sa Bata" means congee-for-a-child. We are concern here of lugaw and the children. We are concern here with what these small children from a small community contribute to one of the world's social problem today - hunger problem.
